Why Is the Wait So Long?

As I'm sure you have noticed, we have quite the wait-list! We have sold out on all our upcoming pickups to February 2025!

Why is this happening?

There is ONE big reason we don't have your beef ready the moment your order is placed -- Your animal is still living the good life out on pasture!

Depending on how far your order is; they are either on our irrigated pasture where we finish all the animals (finish means they have green grasses, some alfalfa hay, good mixed grazing options).

OR, They are still out on the range!

We harvest sold animals, which is why its important to lert us know ahead of time if you cannot fulfill pickup!

We harvest our animals only 2 weeks before your scheduled pickup date. We dry age around 10 days, then your animal is cut, wrapped and weighed the couple days before your pickup.

How much fresher can you get?

We also only harvest 8 animals per pickup; so if we have a bunch of whole beeves sold, we sell out quickly. 1 animal = 4 quarters. We have increased our deliveries to every 3 weeks (skipping July) and this has increased our numbers of beef sold, but we are limited on the amount we can harvest and deliver for 2 reasons;

1. Our awesome butcher, Carl, can only hold 4 beef per harvest in his freezer trailer. He harvests on site, then hauls the meat to his shop in Camp Verde, where we begin our day on pickup day. So he comes out back to back on harvests, gathering the 8 animals.

2. Our beef trailer; this freezer trailer can only hold so many beef share; as they are packed into 90lb boxes, large animals take up space! We average 480lbs per whole (though a few 550Lb through the years) and that's a whole lot of boxes! We have gotten a larger trailer, but even then when we deliver 30 pigs per pickup, its a close fit!

We are a family ranch; working with a small scale butcher. These means we are able to keep a close eye on the quality and consistency of our products - we are better able and more willing to fix problems - we offer the customization most folks can't get in a half or whole share.
